Hot Corn Dip

Love corn? This is an exceptional dip, and different from most of the conventional dips served at parties or “game” days. Need something last minute for Super Bowl Sunday? Short on time? You probably have most of these ingredients on hand..and even if you need to make a quick trip to the store,this can be made in under an hour,including prep! On that note..Goooo Patriots!

  • 2 cans plain or fiesta corn (11oz.,drained)
  • 2 cans chopped green chiles,(7 oz.,drained)
  • 2 T. chopped pickled jalapeno
  • 1 small red pepper,diced finely
  • 2 C. Monteray Jack cheese
  • 2/3 C. grated Parmesean (I use fresh- it does make a difference)
  • 1 C. mayonaise ( I use the Hellman’s Olive Oil)
  • red pepper flakes (optional)

Combine all the ingredients in a bowl.( I halved this recipe so you are seeing smaller quantities)

Pre- heat oven to 350 degrees. If making whole recipe pour into a sprayed 9×13 (or equivalent) baking dish.I made mine in a deep pie dish.

Bake until hot and bubbly.30  minutes for half recipe (or a little longer if the pan is deep).45 minutes for whole recipe.

Serve with a sturdy chip,or crackers.This was gone in 15 minutes….Score!!
