Falafel is a very popular Middle Eastern food. Traveling there, you will see Falafel stands as frequently as you see hot dog stands in New York City. Made from ground chick peas and a variety of seasonings,you can eat it several ways. One is shaping them much as you would meatballs and then dipping them in a delicious combination of hummus and sesame tahini.The other would be to pack them in a pita amongst your favorite veggies.Falafel comes in a mix in the ethnic aisle of your grocery, which I tried. I would never buy it again. This is ridiculously simple to make from scratch,ten times more delicious, and you know exactly what is in it.So expand your tastes, and take your tastebuds to the Middle East.

  • 1 can chickpeas,garbanzos,cici beans-however you know them,drained well
  • 1/2 onion,rough chop
  • 2 cloves garlic
  • 2T. parsley
  • 3 t. flour
  • 1/2 t. salt
  • 1/2 t. coriander
  • 1 t. cumin
  • 1/4 t. bl pepper
  • pinch cayenne
  • pinch nutmeg (my secret ingredient!)
  • Oil for frying
  • lettuce,tomatoes,olives,onions,hummous,tahini,tzatziki for sandwich garnish
  • 4 pitas

Put drained chickpeas, onions, and garlic in processor. Pulse several times til roughly combined.

Add all seasonings and pulse until mixture is grainy,but not a paste.

Refigerate for an hour to combine flavors.They also form better and hold their shape better when cooked cold.

While the chickpea mixture is in the fridge start cutting your veggies  to garnish.Plate and pop in the refigerator to keep cold.

Prepare your hummus plate.I did not make my own hummus this time.There are a number of excellant brands out there. I chose one that had the tahini placed in the middle.I removed it from the container carefully so as not to mix the hummous and tahini, and seasoned with a bit of cayenne and parsley. Refrigerate as well until ready to serve.

Remove chick pea mixture, and begin forming one inch balls for dipping and flattened rounds to put in the pita.

Heat a pan and once heated well add your oil,about a half inch deep. Place several balls in oil and brown evenly on all sides.Repeat with the flattened mounds,draining on papertowels after removing with a slotted spoon.

Arrange the balls on right around your hummus plate.

Presented this way they make a wonderful snack or appetizer.

Finish cooking the flattened falafel. Warm your pitas for about 15 seconds in the microwave. Spread some tzatziki (and some hummus and tahini if you like) on it. Top with lettuce,tomatoes,olives and onions.Put four of the larger flat falafels in the sandwich.

Either way you make them,falafel is a hearty,healthy and satisfying meal.
