Missy’s Peanut Butter Blossoms

More From my baking buddy Missy’s oven:

Cream together:

  • 1/2 C. butter
  • 1/2 C. creamy peanut butter {I use only Jif when baking}
  • 1/2 C. sugar
  • 1/2 C brown sugar(I prefer dark)

Add to peanut butter and sugar mix (except kisses!):

  • 2 T. milk
  • 1 egg
  • 1 t. vanilla
  • 1 3/4 C.  all purpose flour
  • 1 t. baking soda
  • 1 bag chocolate of your choice, kisses, filled kisses, flavored kisses, or the more traditional chocolate star. I found stars in dark chocolate this year so I used both regular milk AND dark chocolate stars

Mix well, cover and place in the fridge or freezer to get cold.

Working with a teaspoon or tablespoon of batter, {depending on how big you want your cookies, I use the teaspoon} roll into balls, dip one side in sugar and place on a lightly greased baking sheet sugar side up. Bake at 350 for about 8 minutes, remove from oven and place a chocolate star or a Kiss on each cookie, using a little twisting motion to set the chocolate into the cookie.At this point the cookies should be rather puffed up, you want to set the chocolate down into the puffed partially baked cookie and you want to work quickly. Return the baking sheet to the oven for an additional 3-4 minutes.  Remove from tray to a rack to cool, and allow the chocolate to reset.

*Note from Missy:It’s quite important in my opinion to bake the chocolate into the cookie, ( instead of putting cookie in AFTER cookie is completely bakes)  as it changes the texture of the chocolate.In baking it, it will never return to the very firm state it was in when you placed it on the cookie. It is now softer, and will never be that ” just bought hard” again.

In my mind this is the difference between an okay blossom cookie and an outstanding one, so go on…..make an outstanding cookie……..it’s really not that much work and definitely worth the effort.

Thursday I received a package from Missy. No one was allowed to touch anything until I got some pics. Here are the peanut butter blossoms. Also plated are Billionaire Bars, Plantation Crunch and Chocolate Crinkles.
