Mandarin Baked Beans

Only a few ingredients! It doesn’t get any easier than this. Just right and not runny.  The addition of Mandarin oranges gives these a special,subtle flavor. Cooked in the microwave -no more scrubbing the beans that invariably stick to the bottom of the pot.  A perfect dish to take to a pot luck,where you will be asked what that secret ingredient is. Don’t tell!!

  • 1 large can Bush’s baked beans( I use the vegetarian of course)
  • 1 large can mandarin oranges
  • 1/4 t. each :ginger,garlic pepper, coriander
  • 2 t. diced jalapeno
  • 1/2 purple onion diced

Pour almost all of the liquid from the beans. Leave about a third of a can of the Mandarin orange juice. Add spices,oranges and onion to beans. Microwave on medium heat for 30 minutes. Stir. If they are still a bit runny I cook them at 10 minute increments until they are not soupy. I don’t like the bean sauce running into my other foods!
